Red Lentil and Tomato Soup

Unlike other beans and legumes, red lentils cook quickly and easily on the stovetop and do not require soaking before cooking like many other beans. You will be amazed at how quick this recipe comes together. Prepping the ingredients takes about five minutes. The cooking time is approximately 45 minutes. The only chopping required is two onions, one zucchini, two carrots and one red pepper. A good alternative will be using dried lentils instead of canned if you prefer to do so because that would probably cut down on the cost a little bit as well.
