Main Course: Christmas Festive Menu
Traditional Hand-Carved Roast Turkey Breast:
Consider a hand-carved roast turkey breast if you’re looking for the perfect Christmas feast. These beauties require time and dedication to make and taste even better, but they are worth it.
The Brook pub’s 25th December special Christmas dinner will be a real treat this year. Roasted turkey breast with a flavorful butter and seasoning mixture is accompanied by homemade pan gravy. The turkey at the Brook pub is stuffed with sage and onion before being roasted alongside pigs in blankets, parsnips, and brussels sprouts. Pigs in blankets are another option for an appetiser.
The turkey and potatoes are then baked in the oven until the turkey is no longer pink in the middle. When it’s ready, we pour some flavorful gravy and top it with cranberry sauce.
Lamb shank Nihari:
Lamb shank Nihari is a dish that is popular in India and Pakistan. It is made from lamb shanks, simmered in a complex combination of spices until they are cooked to perfection. The flavour of the lamb shank Nihari will be different based on the region where it was cooked, but some familiar flavours include cardamom, cloves, cinnamon, and cumin.
If you’re looking for an authentic Indian dish that will captivate your taste buds, try Lamb Shank Nihari! It’s simple to make – At the Brook, we start by heating some oil or ghee in a large pot or Dutch oven over medium-high heat. Once hot, add the lamb shanks and cook them until they are browned all over. Then add enough water to cover the meat (about two cups) and all the desired spices. Bring everything to a boil before reducing the heat and simmering for about three hours. We serve warm rice pilaf or hand-pressed flatbread for a delicious meal!
Seared Sea Trout:
Seared sea trout is a popular dish that typically involves cooking the fish over high heat until it’s slightly charred outside. The delicate flesh inside is then cooked to perfection, leaving behind a delicious and succulent fish filet.
Why seared sea trout?
The beautiful and aromatic herbaceous flavour of seared sea trout can only be achieved by cooking it over high heat. This intense sear gives the fish its unique complex flavours, complemented perfectly by any accompanying sauces or vegetables. Sea Trout also benefits from being lightly grilled – just enough to get that wonderful crusty texture without overcooking or drying out the meat. We serve this nutritious dish with maple mustard mayonnaise, baby potatoes, tender steamed broccoli, sprouts and samphire.
Wild mushroom Linguine:
Did you know we can use wild mushrooms to make delicious pasta dishes?
Several different types of wild mushrooms can be used to create linguine dishes. Some of the most popular varieties include porcini, chanterelles, and henofrio. These fungi have a unique flavour and texture that is perfect for pasta.
Wild mushrooms are a delicious and healthy addition to any dinner menu. They provide tons of nutrients, minerals, and antioxidants that can help improve your health overall. In particular, wild mushrooms can boost your immune system and help you fight off diseases. At our Pub, we serve this dish with creamy sauce and winter truffle, making it a unique vegetarian dish anyone can enjoy!!
Finally, we’ve reached the dessert course, everyone’s favourite part of the Christmas meal.
Desserts: Christmas Festive Menu
Traditional Christmas Pudding:
For many British people, Christmas dinner just isn’t Christmas without a traditional Christmas pudding. Christmas pudding is a rich, dark sponge consisting of dried fruit, candied fruit peel, apple, and citrus zests, unlike the lighter puddings popular in the United States. Its signature rich, deep, and dark flavour and colour come from the brandy and spices.
It is served with brandy cream sauce here at the Brook Pub, and we are confident that you will really adore it!!
Raspberry Cheesecake with Trent’s Coulis:
This creamy and indulgent Raspberry Cheesecake with Trent’s Coulis is a great way to enjoy the season. The dessert features a delicious cheesecake filling layered between two layers of raspberry puree and whipped cream. It’s topped off with a dusting of powdered sugar, which gives it an extra layer of sweetness.
If you’re looking for a delicious dessert, this cake is definitely worth trying. It’s sure a crowd favourite!
Mango & Passion fruit panna cotta with honeycomb:
Panna cotta is a classic Italian dessert often enjoyed during the wintertime. It combines milk, cream, and sugar in a pan over low heat until thickened. Then it’s poured into cups or glasses and set to cool. Panna cotta is typically served chilled, but you can enjoy it at room temperature if desired.
This recipe features mango and passion fruit panna cotta with honeycomb – an unusual but delicious combination! A honeycomb is a candy made from beeswax and honey that has been shaped into small balls or bricks. It tastes sweet, slightly syrupy, and crunchy simultaneously; perfect for topping off your panna cotta cupcake!
Profiteroles with Chocolate Sauce:
The French profiteroles are bite-sized pastries made with choux pastry dough; the same flaky pastry used to make éclairs and cream puffs. Profiteroles come in circular shapes. French pastry masters fill profiteroles with everything from savoury mousse to sweet custard.
Most kids enjoy these French pastries best when eaten in bulk. Chocolate sauce is piped into the centre of the Profiteroles just before serving.
